Italian Dressing Chicken Legs

Zesty Italian dressing coats these whole drumsticks and seasons the juices that collect in the baking dish. A low oven cooks the chicken before a hotter finish browns the skin and a fine layer of Parmesan. Turn the pieces during baking and leave the juices in the pan for serving.

The Parmesan can darken before larger drumsticks are done, so use a thermometer as well as the color of the skin. Plan on about two hours of baking, with a little extra time if needed.

Ingredients for Italian Dressing Chicken Legs

Full baking dish of six Italian dressing chicken legs on a plain countertop
  • 6 bone-in, skin-on chicken drumsticks, about 2½–3 lb (1.1–1.4 kg)
  • ¾ cup regular zesty Italian salad dressing (about 180g)
  • ½ cup finely grated Parmesan cheese (about 45g)
  • 1 tablespoon finely chopped fresh parsley

Use regular, oil-containing dressing rather than fat-free dressing; its oil helps coat the chicken and contributes to the glossy finish. You’ll also need tongs, an instant-read thermometer, and a baking dish large enough to hold the drumsticks in one layer.

How to Bake Italian Dressing Chicken Legs

  1. Coat the chicken: Preheat the oven to 275°F (135°C). Arrange the drumsticks in a roughly 9-by-13-inch baking dish; use a larger pan if they would be substantially stacked. Pour the dressing over them and turn to coat. Do not add oil, water, or broth.
  2. Bake and turn: Bake uncovered for 45 minutes. Turn the drumsticks, bake for another 45 minutes, then turn them again. Leave the cooking juices in the dish.
  3. Add the Parmesan: Increase the oven temperature to 325°F (165°C). Sprinkle half the Parmesan over the exposed sides of the drumsticks. Bake for about 15 minutes, then check the browning and temperature. Gently turn the pieces, sprinkle on the remaining Parmesan, and bake for about 15 minutes more.
  4. Check for doneness: Insert an instant-read thermometer into the thickest part of each drumstick without touching bone. The chicken must reach at least 165°F (75°C); look for glossy skin with golden to deep-brown patches. If needed, continue baking at 325°F in short increments, checking the temperature and cheese. This may take another 10–20 minutes. If the cheese gets very dark before the chicken is done, loosely protect those spots with foil.
  5. Rest and serve: Let the chicken rest for about 5 minutes. Scatter the parsley lightly over the drumsticks and serve from the dish with some of the fully cooked pan juices.

Timing: Allow about 10 minutes to prepare and about 2 hours to bake, plus up to 20 minutes if needed. Rest for 5 minutes before serving.

Why Add the Parmesan Near the End?

Parmesan browns readily, so it goes on during the hotter finish rather than spending the full slow bake in the oven. Sprinkle it lightly: the goal is browned patches integrated into the skin, not a thick cheese layer.

How to Tell When the Drumsticks Are Done

Size, crowding, and oven performance all affect the final browning time. Check the thickest pieces away from the bone; color alone cannot confirm they are cooked through. If the chicken has reached 165°F but looks pale, bake it briefly at 325°F while watching the Parmesan. There’s no need to add another full 30-minute cycle just for color.

Some liquid around the chicken is expected. Serve it with a simple salad or cooked vegetables. For a different dinner with vegetables in the pan, try oven-roasted chicken drumsticks with potatoes and carrots. For another oven-baked flavor, see these honey mustard chicken drumsticks.

How to Store and Reheat Leftovers

As general food-safety guidance, refrigerate leftover chicken in a covered container within 2 hours and use it within 3–4 days. Reheat in an oven-safe dish with some of its juices until the chicken reaches 165°F.

Cooked leftovers can also be frozen in a well-sealed container. Thaw them in the refrigerator before reheating.

Equipment

  • 9-by-13-inch baking dish
  • Tongs
  • Instant-read thermometer
  • Aluminum foil

Ingredients

For the Chicken

  • 6 bone-in, skin-on chicken drumsticks, about 2½–3 lb (1.1–1.4 kg)
  • ¾ cup regular zesty Italian salad dressing (about 180 g)
  • ½ cup finely grated Parmesan cheese (about 45 g)
  • 1 tablespoon finely chopped fresh parsley

Instructions

  1. Preheat the oven to 275°F (135°C).
  2. Arrange the drumsticks in a single layer in a roughly 9-by-13-inch baking dish, using a larger dish if needed.
  3. Pour the Italian dressing over the drumsticks and turn to coat. Do not add oil, water, or broth.
  4. Bake uncovered for 45 minutes. Turn the drumsticks and bake for another 45 minutes, then turn them again. Leave the cooking juices in the dish.
  5. Increase the oven temperature to 325°F (165°C). Sprinkle half the Parmesan over the exposed sides of the drumsticks and bake for about 15 minutes.
  6. Check the browning and temperature. Gently turn the drumsticks, sprinkle with the remaining Parmesan, and bake for about 15 minutes more.
  7. Check the thickest part of each drumstick with an instant-read thermometer, avoiding the bone. Continue baking at 325°F in short increments if needed, until the chicken reaches at least 165°F (75°C).
  8. If the Parmesan gets very dark before the chicken is done, loosely cover those spots with foil.
  9. Rest the chicken for about 5 minutes. Scatter the parsley over the drumsticks and serve with some of the cooked pan juices.

Tips

  • Use regular, oil-containing Italian dressing rather than fat-free dressing.
  • Arrange the drumsticks in one layer so they cook evenly.
  • Check temperature as well as color; browning alone does not confirm doneness.
  • If the chicken is cooked but pale, bake briefly at 325°F while watching the Parmesan.
  • Lightly sprinkle the Parmesan to create browned patches rather than a thick cheese layer.

Notes
