Strawberry Cobbler
Strawberry cobbler can have a biscuit topping, but this version uses a soft, cake-like batter. Baked in a 9-inch round dish, it develops golden edges around large, visible berries and cuts into rustic wedges with glossy strawberry juices.
Dry the washed berries well and mix the batter only until the flour disappears; extra moisture or overmixing can leave the cake portion gummy. Start checking the cobbler at 35 minutes, then let it rest briefly so the hot filling settles before serving.
Ingredients for Strawberry Cobbler

- 1 1/2 pounds fresh strawberries (680g), washed, dried, and trimmed; leave small berries whole and halve or quarter larger ones
- 3/4 cup granulated sugar (150g), divided
- 1 tablespoon cornstarch
- 1 tablespoon lemon juice
- 1 cup all-purpose flour (125g)
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon fine salt
- 3/4 cup whole milk (180g)
- 1/2 cup unsalted butter (1 stick; 113g), melted and divided
- Optional: 1 teaspoon vanilla extract
Vanilla ice cream or lightly sweetened whipped cream is optional for serving.

How to Bake Strawberry Cobbler
- Prepare the dish: Preheat the oven to 350°F (175°C). Lightly grease a 9-inch round oven-safe baking dish. Add 6 tablespoons of the melted butter and tilt the dish to coat the bottom.
- Prepare the strawberries: Pat the berries thoroughly dry. Leave small ones whole and halve or quarter larger ones. Gently toss with 1/4 cup of the sugar, the cornstarch, and lemon juice without crushing the fruit.
- Mix the batter: Whisk the flour, remaining 1/2 cup sugar, baking powder, and salt in a bowl. Stir in the milk and remaining 2 tablespoons melted butter just until no dry flour remains. If using vanilla, add it to the milk first. The batter should be thick but pourable; a few small lumps are fine.
- Assemble: Pour the batter over the butter in the dish without stirring them together. Spoon the strawberries and their juices evenly over the batter, leaving some large berry pieces visible. Do not stir after adding the fruit.
- Bake: Bake uncovered for about 35–45 minutes, beginning to check at 35 minutes. The topping should be golden and set, especially around the rim, and strawberry juices should bubble at the edges. A tester inserted into a cake portion should come out without wet batter. If the top browns deeply before the fruit bubbles, cover it loosely with foil and continue baking.
- Rest and serve: Let the cobbler rest for about 15 minutes so the juices can settle. Cut into generous triangular wedges and spoon loose berries and juices over or alongside each serving.
Why Dry Strawberries Matter
Water left on washed berries can loosen the filling and make the cake portion wetter. Pat the fruit dry before tossing it with the cornstarch, and do not add water. The filling should remain juicy, not set firmly like a pie.
How to Tell When the Cobbler Is Done
The berries’ juiciness and the depth of the baking dish can affect the bake time; an unusually deep dish may take longer in the center. Look for bubbling fruit and a set cake portion as well as a golden top. If a tester picks up strawberry juice, try another spot in the cake rather than mistaking fruit juice for wet batter.
Can You Use Frozen Strawberries?
Fresh berries are the more dependable choice for distinct fruit pieces and a tender cake topping. If using frozen strawberries, thaw and drain them well. They may still release more moisture, so expect the filling texture and baking time to differ.
Storage and Reheating
Cool leftovers, cover, and refrigerate promptly for up to 3 days. The topping will soften as it sits. Reheat individual portions briefly in the microwave, or warm the cobbler in a 300°F (150°C) oven until heated through. Cover loosely with foil if the top is browning further.
For make-ahead preparation, trim and cut the berries and refrigerate them separately; mix the batter shortly before baking. Freezing is possible, but the topping may be softer or soggier after thawing. If freezing leftovers, cool them completely, wrap tightly, thaw in the refrigerator, and reheat before serving.
