Caprese Sandwich with Pesto
These focaccia Caprese bites have distinct layers of basil pesto, ripe tomato, fresh basil, and thick slices of mozzarella. The focaccia is lightly toasted before filling, then cooled so the bread has a little structure while the cheese stays fresh and unmelted.
Assemble the sandwich as one slab, cut it into nine appetizer-size bites, and top each with a cherry tomato on a pick. Blotting the tomato and cutting with a serrated knife help keep the soft bread and layers neat.
Ingredients for Caprese Focaccia Bites

Makes 9 appetizer-size bites. Prep time: 15 minutes. Toasting time: 4–6 minutes. Total time: about 20–25 minutes.
- 1 focaccia loaf or slab, about 8–9 inches square and 12–16 ounces (400g)
- 1/3 cup basil pesto (80g), prepared or homemade
- 8 ounces fresh mozzarella, drained (225g)
- 1 large ripe, firm tomato (about 180g)
- 12–18 fresh basil leaves (about 10g)
- 9 cherry tomatoes
- 9 bamboo cocktail picks
Optional: Balsamic glaze, served on the side or added sparingly just before serving.
How to Make Caprese Sandwich Bites

- Split and toast the focaccia: Preheat the oven or toaster oven to 400°F (205°C). Slice the focaccia horizontally into a top and bottom slab. Place both pieces cut-side up on a baking sheet and toast for 4–6 minutes, checking at 3 minutes. Remove when the cut faces are lightly crisp and faintly golden, but the bread is still soft.
- Prepare the filling: Slice the drained mozzarella thickly enough to form a visible layer. Thinly slice the tomato and gently blot both sides with paper towels. Rinse and dry the basil leaves and cherry tomatoes.
- Layer the sandwich: Let the focaccia cool to room temperature. Spread the pesto evenly over both cut faces, covering the bread without letting it pool. Layer the tomato, basil, and mozzarella on the bottom slab, keeping the filling level and inside the edges.
- Cut into bites: Add the top slab and press gently. With a serrated knife and a light sawing motion, cut the sandwich into 9 compact squares or short rectangles. Wipe the blade if the filling smears across the cut faces.
- Top and serve: Place a whole cherry tomato on each bite and secure it with a bamboo pick. Insert the pick straight down without pushing it through the base. Arrange the bites with their layers facing outward and serve soon after assembly.
Why Toast Only the Bread?
Briefly toasting the cut faces helps the focaccia hold pesto and moist fillings without making the bread hard. Cool it before assembly, and do not heat the filled sandwich: the mozzarella should stay white and distinctly sliced, not melted.
For softer bites, skip the toast and assemble with untoasted focaccia. The bread may soften sooner where it touches the filling.
How to Keep the Bites Neat
Use a firm, ripe tomato and blot the slices without crushing them. Keep the filling in even layers rather than a tall mound, which can shift as you cut. If the slab moves too much, chill it briefly before cutting. Add the cherry tomato picks only after the bites are cut.
Make-Ahead and Storage
You can prepare the sliced, dried filling ingredients ahead, but assemble the bites close to serving for the best bread texture. If needed, wrap and refrigerate the assembled sandwich briefly, then cut and add the picks before serving. Expect some softening, and avoid stacking the finished bites heavily.
Refrigerate leftovers in a covered container. Do not reheat them if you want the mozzarella to stay fresh and unmelted. Freezing the assembled bites is not recommended; the tomato, basil, and mozzarella can lose their intended texture.
Optional Balsamic Finish
Balsamic glaze is not needed for the main version. Offer it on the side or add a light drizzle just before serving so the pesto and fresh layers remain visible.

Tips
- Blot the tomato slices gently to reduce moisture without crushing them.
- Let the toasted focaccia cool before adding the filling so the mozzarella stays fresh and unmelted.
- Keep the filling in even layers rather than a tall mound to help the bites hold together.
- Wipe the serrated knife if filling smears across the cut faces.

Variations
- Untoasted Focaccia Bites: Skip toasting the bread for softer bites; assemble and serve soon, as the bread may soften where it touches the filling.
