Air Fryer Mozzarella Sticks
Short pieces of mozzarella string cheese get a double coating of seasoned panko and Italian breadcrumbs for a thick, crunchy crust. A brief freeze between coating passes keeps the first layer in place; a longer freeze before air frying helps the crust crisp before the cheese escapes. The cooking window is short, so start checking early and serve the deeply golden sticks with marinara while they’re hot.
Makes about 16 sticks, or 4–6 appetizer servings. Allow about 25 minutes of hands-on prep, about 1 hour 20 minutes of freezing, and 5–7 minutes of cooking per batch.
Ingredients for Air Fryer Mozzarella Sticks

- 8 mozzarella string cheese sticks, preferably regular or full-fat, cut in half crosswise (225g)
- 1/2 cup all-purpose flour (60g)
- 2 large eggs
- 1 cup panko breadcrumbs (55g)
- 1/2 cup Italian breadcrumbs (55g)
- 1 teaspoon Italian seasoning
- 1/2 teaspoon garlic powder
- 1/4 teaspoon kosher salt
- 1/8 teaspoon black pepper
- Cooking spray, for a light coating
- 1 cup marinara sauce, for serving (240g)
Optional: Mix 1 teaspoon dried parsley into the crumbs for more herb flecks. For a savory accent, replace 2 tablespoons of the breadcrumbs with 2 tablespoons finely grated Parmesan.
How to Make Air Fryer Mozzarella Sticks

- Set up the coating bowls: Put the flour in one shallow bowl and whisk the eggs in a second. In a third bowl, combine the panko, Italian breadcrumbs, Italian seasoning, garlic powder, salt, and pepper.
- Coat the cheese: Dredge each piece in flour and shake off the excess. Dip it in egg, then roll it in the crumbs, pressing gently to cover the sides and ends. Arrange the pieces separately on a parchment-lined tray.
- Freeze and coat again: Freeze for about 20 minutes, until the first coating feels firmer. Dip each piece in egg again, then roll it in the crumbs a second time. Press crumbs onto any bare or thin spots.
- Freeze until firm: Return the sticks to the tray and freeze for about 1 hour, until the coating stays in place when the sticks are lifted. Keep them frozen until ready to cook; do not thaw.
- Preheat the air fryer: Preheat to 390°F (200°C) for about 3 minutes, or use the appliance’s preheat setting. Lightly spray the frozen sticks with cooking spray.
- Air fry in batches: Arrange the sticks in a single layer with space between them. Air fry from frozen for about 5–7 minutes, checking at 4 minutes and watching closely afterward. Remove them when the coating is crisp and deeply golden with toasted-brown spots, or immediately if cheese starts bubbling through. Do not routinely flip them; handling can disturb the coating.
- Serve: Let stand for 1–2 minutes so the molten cheese is less likely to burn. Arrange the sticks loosely on a plate or parchment-lined tray and serve hot with marinara.
Why Freeze the Coated Sticks?
The first, shorter freeze makes the coating easier to handle during the second egg-and-crumb dip. Freezing the finished sticks until firm gives the crust time to set in the air fryer before the mozzarella melts enough to escape. Cook them directly from frozen.
How to Limit Cheese Leaks
Cover the ends as well as the sides, and leave space between sticks in the basket so they brown evenly. Start checking at about 4 minutes: once cheese bubbles through, remove the sticks rather than cooking longer for more color. Even a well-coated stick can leak if it cooks too long.
The 390°F setting and 5–7-minute range are for these homemade, frozen sticks. Air-fryer style, stick thickness, and basket arrangement can change the timing. Packaged frozen mozzarella sticks are a different product; follow their product-specific directions instead.
Make-Ahead, Storage, and Reheating
To make the sticks ahead, freeze the uncooked, breaded pieces in a single layer until solid, then transfer them to a freezer-safe bag or container. For best quality, use within about 3 months. Air fry directly from frozen, checking early.
Refrigerate cooked leftovers in an airtight container for up to 2 days. Reheat briefly in the air fryer until hot and crisp, watching for cheese that may split or leak. Microwaving will soften the coating.
