No-Bake Date Energy Balls
These date energy balls are chewy and cocoa-dark, with pale flecks of oats and chia and crunchy pretzel pieces on the outside. Dates provide the sweetness and much of the binding; peanut butter helps the mixture hold together.
The food processor mixture does not need to look smooth. Squeeze a small portion before shaping: if it compacts into a ball, it is ready. Add the pretzels last so the pieces stay distinct.
Ingredients for No-Bake Date Energy Balls

- 1 cup packed pitted soft Medjool dates (about 10–12 dates; 170g)
- ¾ cup rolled oats (about 70g)
- ¼ cup creamy peanut butter (about 65g)
- 2 tablespoons unsweetened cocoa powder (about 10g)
- 1 tablespoon chia seeds (about 10g)
- ¾ cup small pretzels, broken into visible pieces (about 45g), divided
- ⅛ teaspoon fine salt
For a nut-free version, replace the peanut butter with sunflower seed butter and check the other ingredients for your allergen needs. Seed-butter thickness varies, so use the squeeze test below. Use certified gluten-free oats and pretzels if needed.
How to Make No-Bake Date Energy Balls

- Check the dates: Use soft, sticky dates as they are. If they feel firm or dry, cover them with hot water for about 10 minutes, then drain and pat dry.
- Process the base: Add the dates, oats, peanut butter, cocoa, chia seeds, and salt to a food processor. Pulse, scraping down the sides as needed, until no large date pieces remain and the mixture is evenly dark and coarse, about 2–4 minutes.
- Test the texture: Squeeze a small portion firmly. If it holds together, leave it as is, even if it looks crumbly in the processor. If it falls apart, pulse again, then add water 1 teaspoon at a time only if needed. If it is too sticky to shape, pulse in oats 1 tablespoon at a time or chill the mixture briefly.
- Add the pretzels: Reserve about one-third of the broken pieces for the outside. Add the rest to the processor and pulse briefly, just until scattered through the mixture. Do not grind them into the base.
- Shape: Divide into 12 portions, about 1½ inches across. Squeeze each portion firmly before rolling it into a slightly irregular ball. Press the reserved pretzel pieces into the surfaces so they stay attached.
- Chill if needed: Serve once shaped, or refrigerate for about 15 minutes if the balls feel soft. They should hold their shape when lifted.
How to Store the Energy Balls
Store in an airtight container in the refrigerator for up to one week. To freeze, arrange the balls in a single layer on a lined tray until firm, then transfer to an airtight freezer container or bag. Use within three months. A frozen ball can sit at room temperature for a few minutes before eating.

- The mixture can look crumbly in the processor; use the squeeze test to check whether it is ready to shape.
- Add the pretzels last and pulse briefly to keep the pieces distinct.
- Adjust sticky or crumbly mixture gradually with oats or water, a little at a time.
