Warm Crab Dip

This warm crab dip has a thick, scoopable center with visible pieces of crab beneath scattered patches of browned cheese. It bakes in a small dark skillet at 350°F (175°C), then goes to the table with toasted baguette slices. Drain the crab and roasted red pepper well before mixing: even a little packing liquid can loosen the creamy base. The dip is ready when its edges bubble and the center is hot; a brief broil is only for extra color.

Makes 8 appetizer servings.

  • 12 ounces real lump crab meat (340g), picked over for shell and thoroughly drained
  • 8 ounces cream cheese (225g), softened
  • 1/4 cup mayonnaise (about 60g)
  • 1/4 cup sour cream (60g)
  • 3/4 cup shredded sharp cheddar (85g), divided
  • 1/4 cup finely grated Parmesan (25g)
  • 2 tablespoons finely diced roasted red pepper (20g), drained and blotted dry
  • 2 scallions, thinly sliced
  • 1 teaspoon fresh lemon juice
  • 1 teaspoon Old Bay or similar seafood seasoning
  • 1/4 teaspoon garlic powder
  • 1 small baguette (about 250g), sliced

Optional: A few dashes of hot sauce or 1/2 teaspoon Worcestershire sauce, stirred into the creamy base.

How to Make Warm Crab Dip

  1. Prepare the skillet and crab: Preheat the oven to 350°F. Lightly grease an 8-inch ovenproof skillet, approximately 1-quart capacity. Pick through the crab for shell, drain it thoroughly, and pat it dry if it feels wet. Drain and blot the diced pepper.
  2. Mix the base: Stir the softened cream cheese until smooth. Mix in the mayonnaise, sour cream, lemon juice, seafood seasoning, and garlic powder. Stir in the Parmesan, scallions, pepper, and 1/2 cup of the cheddar.
  3. Fold in the crab: Gently fold in the crab just until distributed, keeping larger pieces intact. Spread the mixture in the skillet without packing it down, leaving a little room below the rim for bubbling. Scatter the remaining 1/4 cup cheddar unevenly over the top, with some creamy surface still exposed.
  4. Bake until hot: Bake uncovered for about 22 to 28 minutes, starting to check at 20 minutes. The edges should bubble, and the center should be hot when opened with a spoon. The dip should be thick and scoopable, not watery or firm. A deeper skillet or refrigerator-cold dip may need longer. If the top browns before the center is hot, cover loosely while it finishes baking.
  5. Brown and rest: If the center is hot but the top needs more color, broil for up to 1 to 2 minutes, watching continuously. Keep the skillet safely below the broiler element and remove it when scattered cheese patches brown. Let stand for about 5 minutes.
  6. Toast and serve: While the dip bakes, arrange the baguette slices on a baking sheet and toast in the oven or a toaster oven until lightly browned, about 5 to 8 minutes. Set the hot skillet on a heat-safe white serving plate or trivet, with the toast around it. Open a small area of the top with a serving spoon to reveal the creamy, crab-filled center. Warn guests that the skillet is hot.

How to Keep Crab Dip Thick and Creamy

Crab and roasted red pepper can carry enough liquid to thin the dip, especially when packed in cans or jars. Drain both well, blot away visible moisture, and leave the packing liquid out of the bowl. Stir the softened cream cheese smooth before adding the crab, then fold gently so the crab stays in discernible pieces.

Getting a Browned Skillet Top

The reserved cheddar helps create uneven browned patches, but surface color does not tell you whether the center is hot. Check for bubbling edges and a hot center before considering the broiler. Skip it if the top has enough color after baking; if you do broil, stay beside the oven because the cheese can burn quickly.

Choosing Crab Meat

Lump crab gives the dip larger visible pieces. Canned real crab, backfin, or claw meat also works; pick through it for shell, drain it especially well, and expect smaller pieces in the finished dip.

Serving Warm Crab Dip

Serve with the toasted baguette slices arranged around the skillet. Sturdy crackers or celery can be offered alongside. For a cool appetizer beside the hot dip, serve classic deviled eggs.

Make-Ahead and Leftovers

To make ahead, assemble the dip in the skillet, cover, and refrigerate for up to one day. Bake near serving time, allowing extra time if it goes into the oven cold. Check that the center is hot before browning the top.

Refrigerate leftovers promptly in a covered container for up to 3 days; do not leave the dip at room temperature for more than 2 hours. Reheat at 350°F until hot, or microwave gently in short intervals. Freezing is not recommended because the creamy base may separate or become grainy.

  • Baking sheet
  • Mixing bowl

Ingredients

For the Dip

  • 12 ounces real lump crab meat (340g), picked over and thoroughly drained
  • 8 ounces cream cheese (225g), softened
  • 1/4 cup mayonnaise (about 60g)
  • 1/4 cup sour cream (60g)
  • 3/4 cup shredded sharp cheddar (85g), divided

  • 2 scallions, thinly sliced
  • 1 teaspoon fresh lemon juice
  • 1 teaspoon Old Bay or similar seafood seasoning
  • 1/4 teaspoon garlic powder
  • Optional: a few dashes of hot sauce or 1/2 teaspoon Worcestershire sauce

For Serving

  • 1 small baguette (about 250g), sliced

Instructions

  1. Preheat the oven to 350°F (175°C). Lightly grease an 8-inch ovenproof skillet with approximately 1-quart capacity.
  2. Pick through the crab for shell, drain it thoroughly, and pat it dry if needed. Drain and blot the diced roasted pepper.
  3. Stir the softened cream cheese until smooth. Mix in the mayonnaise, sour cream, lemon juice, seafood seasoning, garlic powder, and optional hot sauce or Worcestershire sauce.
  4. Stir in the Parmesan, scallions, roasted pepper, and 1/2 cup of the cheddar.
  5. Gently fold in the crab, keeping larger pieces intact. Spread the mixture in the skillet without packing it down, then scatter the remaining 1/4 cup cheddar over the top.
  6. Bake uncovered for 22 to 28 minutes, starting to check at 20 minutes, until the edges bubble and the center is hot. If the top browns before the center is hot, cover loosely while it finishes baking.
  7. If desired, broil for 1 to 2 minutes to brown the top, watching continuously. Let the dip stand for about 5 minutes.
  8. While the dip bakes, arrange the baguette slices on a baking sheet and toast in the oven or a toaster oven until lightly browned, about 5 to 8 minutes. Serve the hot skillet on a heat-safe plate or trivet with the toast around it.

Tips

  • Drain and blot the crab and roasted pepper well to keep the dip thick.
  • Fold the crab in gently so larger pieces stay intact.
  • Check that the center is hot before broiling; surface color alone does not indicate doneness.
  • Watch the dip continuously if broiling, as the cheese can burn quickly.
  • Warn guests that the skillet is hot.

Variations

  • Spicy or Worcestershire Crab Dip: Stir a few dashes of hot sauce or 1/2 teaspoon Worcestershire sauce into the creamy base.
  • Backfin or Claw Crab Dip: Use canned real crab, backfin, or claw meat instead of lump crab; pick through it for shell and drain it especially well.

Notes

Assemble up to one day ahead and refrigerate covered; allow extra baking time if cold. Refrigerate leftovers promptly for up to 3 days and reheat at 350°F until hot or microwave gently. Do not leave at room temperature for more than 2 hours. Freezing is not recommended.
