Cranberry Orange Muffins
Whole cranberries make tart, juicy pockets in these tender muffins, while orange zest and juice give the batter its citrus flavor. Rubbing the zest into the sugar brings out its aroma before mixing. The muffins bake directly in a greased pan, giving them golden sides and lightly domed tops dotted with berries. Serve them plain, without a glaze or topping.
Ingredients for Cranberry Orange Muffins
- 2 cups all-purpose flour (250g)
- 3/4 cup granulated sugar (150g)
- 1 tablespoon finely grated orange zest (6g)
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon fine salt
- 2 large eggs
- 1/2 cup neutral oil, such as vegetable or canola oil (110g)
- 1/2 cup plain whole-milk yogurt (120g)
- 1/2 cup fresh orange juice (120g)
- 1 teaspoon vanilla extract
- 1 1/2 cups fresh or frozen whole cranberries, divided (150g)
- Butter, oil, or baking spray, for greasing the pan

Yield: 12 standard-size muffins.

How to Bake Cranberry Orange Muffins
- Heat the oven and grease the pan: Place a rack in the center of the oven and preheat to 375°F (190°C). Thoroughly grease all 12 wells and the upper rims of a standard metal muffin pan. Leave the wells unlined so the muffins develop golden sides.
- Combine the dry ingredients: In a large bowl, rub the orange zest into the sugar with your fingertips until fragrant and slightly damp. Whisk in the flour, baking powder, baking soda, and salt.
- Combine the wet ingredients: In a second bowl, whisk the eggs, oil, yogurt, orange juice, and vanilla until smooth. Pour into the dry ingredients.
- Fold in the cranberries: Stir just until most flour streaks disappear. Set aside about 1/3 cup of the cranberries for the tops, then gently fold in the rest until no dry flour remains. The batter should be thick and scoopable. If using frozen cranberries, add them without thawing.
- Fill the pan: Divide the batter evenly among the wells, filling each about three-quarters full. Lightly press 2 to 3 reserved cranberries into each top without flattening the batter.
- Bake: Bake uncovered for 18 to 22 minutes. Keep the oven closed until the first check at 18 minutes. The tops should be lightly golden, puffed, and spring back gently. Insert a tester into the crumb near the center, avoiding a cranberry; it should come out clean or with a few moist crumbs, not wet batter.
- Cool: Let the muffins rest in the pan for 5 minutes. Loosen the edges gently with a thin knife if needed, then transfer to a wire rack. Cool for at least 10 more minutes before serving.
Fresh or Frozen Cranberries
Both work here. Fold frozen cranberries into the batter straight from the freezer; thawing can cause more juice to bleed into it. Start checking the muffins at 18 minutes either way. Frozen berries may need a few more minutes, so rely on the set tops and a tester inserted into the crumb rather than the clock alone.
How to Keep the Muffins Tender
Measure the flour by weight if possible, or spoon it into the measuring cup and level it off. Too much flour or extra stirring after the wet and dry ingredients meet can make muffins dense. Fold the cranberries in gently and stop once the flour is incorporated.
Orange juice adds brightness, but it does not replace the aroma of zest. Rubbing the zest into the sugar helps distribute its fragrant oils throughout the batter.
Optional Finishes
For a sweeter variation, drizzle fully cooled muffins with a glaze made from 1/2 cup powdered sugar and 1 to 2 teaspoons orange juice. You can also sprinkle 1 to 2 tablespoons coarse sugar over the batter before baking for a crisp top. Skip either finish to keep the muffins plain and berry-forward.
Serving and Storage
Serve warm or at room temperature, on their own or with a Honey Cinnamon Latte.
Cool the muffins completely before storing them in an airtight container. Keep them at room temperature for up to 2 days or refrigerate for up to 5 days. If condensation collects in the container, add a paper towel. Warm a room-temperature muffin in the microwave for about 10 to 15 seconds; warm a refrigerated muffin briefly until just soft.
Freeze fully cooled muffins in a freezer bag or airtight container for up to 3 months. Thaw at room temperature or overnight in the refrigerator, then warm briefly if desired. For another berry-based breakfast bake, try these Protein Blueberry Muffins.

- Butter, oil, or baking spray, for greasing the pan
Instructions
- Place a rack in the center of the oven and preheat to 375°F (190°C). Thoroughly grease all 12 wells and upper rims of a standard metal muffin pan.
- Rub the orange zest into the sugar in a large bowl with your fingertips until fragrant and slightly damp.

- Reserve about 1/3 cup cranberries for topping, then gently fold the remaining cranberries into the batter until no dry flour remains. Do not thaw frozen cranberries.
- Divide the thick batter among the prepared muffin wells, filling each about three-quarters full. Press 2 to 3 reserved cranberries lightly into the top of each muffin.
- Bake uncovered for 18 to 22 minutes, checking first at 18 minutes. The tops should be lightly golden and spring back gently, and a tester inserted into the crumb should come out clean or with a few moist crumbs.

Tips
- Rub the orange zest into the sugar to release and distribute its aromatic oils.
- Measure flour by weight when possible, or spoon it into a measuring cup and level it to avoid dense muffins.
- Stir only until the flour is incorporated; overmixing can make the muffins tough.
- Add frozen cranberries directly from the freezer to prevent excess juice from bleeding into the batter.
- Test the crumb near the center of a muffin and avoid hitting a cranberry when checking doneness.
Variations
- Orange Glazed Muffins: Drizzle fully cooled muffins with a glaze made from 1/2 cup powdered sugar and 1 to 2 teaspoons orange juice.
- Coarse Sugar Topping: Sprinkle 1 to 2 tablespoons coarse sugar over the batter before baking for a crisp, sweet top.
