White Chocolate Cranberry Cookies
These large drop cookies have lightly golden edges, soft centers, and plenty of tart dried cranberries and white chocolate chips. Chilling the dough for an hour and scooping it into tall mounds helps the cookies bake up thick rather than flat. Save some cranberries and chips to press onto each mound so they remain visible on the craggy tops. Take the cookies out while their centers still look soft; they’ll finish setting on the baking sheet.
Yield: About 18 cookies. Prep: 20 minutes. Chill: 1 hour. Bake: 10 to 12 minutes per sheet.
Ingredients for White Chocolate Cranberry Cookies

- 1 cup unsalted butter, softened but still cool (225g)
- 3/4 cup packed light brown sugar (165g)
- 1/4 cup granulated sugar (50g)
- 1 large egg, at room temperature
- 2 teaspoons vanilla extract
- 2 1/4 cups all-purpose flour (280g)
- 2 teaspoons cornstarch
- 1 teaspoon baking soda
- 1/2 teaspoon fine salt
- 1 cup dried cranberries, divided (120g)
- 1 cup white chocolate chips, divided (170g)
Weigh the flour if possible, or spoon it into the measuring cup and level it. Packed flour can make the cookies dry and dense. Use dried cranberries; fresh berries add moisture and are not a direct substitute in this dough.
How to Make White Chocolate Cranberry Cookies

- Mix the dry ingredients: Whisk the flour, cornstarch, baking soda, and salt in a medium bowl.
- Cream the butter and sugars: Beat the butter, brown sugar, and granulated sugar in a large bowl for 2 to 3 minutes, until creamy and slightly lighter. The butter should be soft enough to indent but not melted or greasy. Beat in the egg and vanilla until smooth, then scrape down the bowl.
- Finish the dough: Mix in the dry ingredients on low speed just until a few flour streaks remain. Fold in 3/4 cup of the cranberries and 3/4 cup of the white chocolate chips until no dry flour remains. Reserve the remaining 1/4 cup of each for the tops.
- Chill: Cover and refrigerate the dough for 1 hour. During the last 15 minutes, preheat the oven to 350°F (175°C) and line light-colored baking sheets with parchment paper.
- Scoop: Portion the dough into 2-tablespoon mounds, keeping them taller than they are wide rather than flattening them. Place them about 2 1/2 inches apart, 6 to 8 per sheet. Gently press the reserved cranberries and chips onto the tops and sides without compressing the dough.
- Bake: Bake one sheet at a time for 10 to 12 minutes, starting to check at 10 minutes. Remove the cookies when the edges are set and just pale golden but the centers still look soft, not dry. If your oven browns unevenly, rotate the sheet once during baking. Use a cool baking sheet for each batch; a warm sheet can cause excess spreading.
- Cool: Leave the cookies on the baking sheet for 5 to 10 minutes to finish setting, then transfer them to a wire rack to cool completely.
How to Keep the Cookies Thick and Soft
If the dough still feels notably soft after its hour in the refrigerator, especially in a warm kitchen, chill it for another 20 to 30 minutes before scooping. Keep the portions tall and use cool, parchment-lined sheets to limit spread.
Don’t wait for the centers to look fully dry before removing the cookies. They firm up during the brief rest on the pan; baking longer produces a firmer, crisper cookie.
Variations
For a citrus accent, add 1 teaspoon finely grated orange zest with the wet ingredients. Chopped white chocolate can replace the chips for more irregular pockets of chocolate. For an oat-based alternative, try these cranberry oatmeal cookies with white chocolate.
Storage and Freezing
Cool the cookies completely, then store them in an airtight container at room temperature for 3 to 5 days.
Covered dough can be refrigerated for up to 2 days; let it sit just until scoopable if it becomes very firm. To freeze dough, freeze scooped portions on a tray until firm, then transfer them to freezer-safe storage for up to 3 months. Bake from frozen, allowing approximately 2 to 5 extra minutes and checking for set, pale-golden edges and soft centers.
Fully cooled baked cookies can also be frozen in an airtight container, with parchment between layers, for up to 3 months.

Tips
- Weigh the flour when possible, or spoon and level it to avoid dry, dense cookies.
- Use dried cranberries rather than fresh cranberries, which add too much moisture to the dough.
- Keep dough portions taller than wide to help the cookies bake thick instead of spreading flat.
- Use cool, parchment-lined baking sheets for each batch to prevent excess spreading.
- Remove the cookies while the centers still look soft; they will finish setting on the baking sheet.
- Chill the dough for an additional 20 to 30 minutes if it remains very soft after the initial chill.
Variations
