Slow Cooker Honey Garlic Chicken and Veggies
Bone-in chicken thighs cook over red potatoes and baby carrots in a honey garlic sauce made with soy sauce and ketchup. Whole green beans join near the end, when the other vegetables are almost tender, so they keep their shape. The cooking juices make a glossy, pourable sauce that pools around the vegetables.
Slow-cooker heat leaves chicken skin soft and pale. A brief broil on a separate pan browns the cooked thighs before they go back into the cooker.
Ingredients

Serves 4–6.
- 4–6 bone-in, skin-on chicken thighs, about 2–2 1/2 lb (900g–1.1kg)
- 1 lb baby red potatoes, halved or quartered into similar bite-size pieces (450g)
- 12 oz baby carrots (340g)
- 8 oz fresh green beans, trimmed and left whole (225g)
- 1/3 cup honey (113g)
- 1/3 cup reduced-sodium soy sauce (80g)
- 1/4 cup ketchup (60g)
- 4 garlic cloves, minced
- 1/2 teaspoon dried thyme
- 1/2 teaspoon freshly ground black pepper
- 2 tablespoons chopped fresh parsley
Optional: Add a pinch of crushed red pepper flakes to the sauce for gentle heat. For a thicker sauce after cooking, mix 1 tablespoon cornstarch with 1 tablespoon cold water.
How to Make Slow Cooker Honey Garlic Chicken and Veggies

- Prepare the vegetables: Cut the potatoes into roughly equal-size pieces. Trim the green beans, leave them whole, and set them aside.
- Mix the sauce: Whisk together the honey, soy sauce, ketchup, garlic, thyme, and black pepper. Add the red pepper flakes if using.
- Fill the slow cooker: Arrange the potatoes and baby carrots in an approximately 6-quart slow cooker without packing them tightly. Set the thighs on top, skin-side up, and pour the sauce over and around them. Do not add broth; the chicken and vegetables will release juices.
- Slow-cook: Cover and cook on LOW for approximately 6–8 hours or HIGH for 3–4 hours total, including the green-bean period. Start checking near 6 hours on LOW or 3 hours on HIGH. Add the beans when the potatoes are nearly fork-tender and the chicken is close to done; if either needs longer, keep cooking before adding them.
- Add the green beans: Place them together in an open area of the cooker. Cover and cook on the same setting for the final 20–30 minutes. The beans should be tender and hold their shape, the potatoes and carrots should be fork-tender, and the thickest part of a thigh should reach at least 165°F (75°C) when checked away from the bone.
- Brown the chicken: Preheat the broiler shortly before cooking is complete. Transfer only the thighs to a separate broiler-safe rimmed pan, skin-side up. Broil for about 2–4 minutes, watching continuously, until the skin is golden brown with a few darker spots. Honey-coated skin can scorch quickly. Never put the slow-cooker insert under the broiler.
- Finish and serve: Skim excess fat from the cooking liquid if desired. Return the thighs to the cooker above the vegetables, spoon sauce around rather than over the browned skin, and scatter the parsley on top.
Why the Green Beans Go In Last
Potatoes and carrots need the long cook, but green beans can turn limp if they spend hours in the sauce. Adding them whole for only the final 20–30 minutes keeps them distinct. They may turn olive-green as they cook; tenderness matters more than a bright green color.
Adjusting the Sauce
Juices from the chicken and vegetables make the sauce pourable rather than thick like a glaze. For a thicker sauce, skim excess fat, transfer some cooking liquid to a small saucepan, and simmer it over medium heat with the optional cornstarch mixture until thickened. Do not place a slow-cooker insert directly on a stovetop burner unless it is specifically rated for that use.
Chicken Cut and Broiler Options
Use thawed, bone-in, skin-on thighs for the cooking schedule above. Boneless thighs or breasts need substantially shorter, cut-specific cooking times and will not have the same whole, browned presentation. Do not put frozen chicken directly into the slow cooker.
You can skip the broiler if browned skin is not important. The chicken will still be cooked through, but the skin will be softer and paler.
Serving and Leftovers
Serve each thigh with potatoes, carrots, and green beans, spooning sauce around the chicken. Refrigerate cooled leftovers promptly in an airtight container for up to 3 days. Reheat gently on the stovetop with some sauce or in a covered dish until hot throughout; prolonged heating can dry out the chicken. Freezing the complete meal is not recommended here because the vegetables’ texture after thawing is uncertain.

To Finish
- 2 tablespoons chopped fresh parsley
- 1 tablespoon cornstarch mixed with 1 tablespoon cold water, optional for thickening
Instructions
- Cut the potatoes into roughly equal bite-size pieces. Trim the green beans, leave them whole, and set them aside.
- Whisk together the honey, soy sauce, ketchup, garlic, thyme, and black pepper. Add red pepper flakes if using.
- Arrange the potatoes and carrots in a 6-quart slow cooker without packing them tightly.

- Cover and cook on LOW for approximately 6–8 hours or HIGH for 3–4 hours total. Start checking near 6 hours on LOW or 3 hours on HIGH.
- When the potatoes are nearly fork-tender and the chicken is close to done, add the green beans together in an open area of the cooker. If the potatoes or chicken need more time, continue cooking before adding the beans.
- Cover and cook on the same setting for the final 20–30 minutes, until the beans are tender but hold their shape, the potatoes and carrots are fork-tender, and the thickest part of a thigh reaches at least 165°F (75°C) away from the bone.
- Shortly before cooking is complete, preheat the broiler. Transfer only the thighs, skin-side up, to a separate broiler-safe rimmed pan.
- Broil for about 2–4 minutes, watching continuously, until the skin is golden brown with a few darker spots. Do not put the slow-cooker insert under the broiler.
- Skim excess fat from the cooking liquid if desired. Return the thighs to the cooker above the vegetables, spoon sauce around the browned skin, and scatter parsley on top.
- For thicker sauce, skim excess fat, transfer some cooking liquid to a small saucepan, and simmer over medium heat with the cornstarch mixture until thickened.
Tips
- Use thawed, bone-in, skin-on thighs for the stated cooking schedule; do not put frozen chicken in the slow cooker.
- Add the whole green beans only for the final 20–30 minutes so they keep their shape.
- Broil the chicken on a separate pan and watch it closely because honey-coated skin can scorch quickly.
- Check the thigh temperature away from the bone and make sure it reaches at least 165°F (75°C).
- The vegetables and chicken release enough liquid, so no broth is needed.
Variations
- Spicy Honey Garlic Chicken: Add a pinch of crushed red pepper flakes to the sauce for gentle heat.
- Thicker Sauce: Simmer some cooking liquid with 1 tablespoon cornstarch mixed with 1 tablespoon cold water until thickened.
