Air Fryer Meatloaf
A compact beef loaf cooks in the air fryer, then gets a ketchup glaze partway through so the topping can brown without spending the entire cook exposed to heat. Panko soaked in milk helps the loaf hold together while staying tender. After a 10-minute rest, cut it into thick slices with the glazed tops and onion-studded interiors visible.
Loaf thickness and air fryer airflow affect the cooking time. Use an instant-read thermometer to confirm the center reaches 160°F (70°C) rather than judging doneness by color or the clock alone.
Ingredients for Air Fryer Meatloaf

- 1½ pounds 90% lean ground beef (680g)
- ½ cup panko breadcrumbs (30g)
- ⅓ cup milk (80g)
- 1 large egg
- ½ cup finely chopped yellow onion (75g)
- 1 tablespoon Worcestershire sauce
- ½ teaspoon garlic powder
- 1 teaspoon kosher salt
- ½ teaspoon black pepper
For the glaze:
- ⅓ cup ketchup (80g)
- 1 tablespoon packed light brown sugar
- 1 teaspoon Worcestershire sauce
- 1 teaspoon apple cider vinegar, optional, for a tangier glaze
How to Make Air Fryer Meatloaf

- Prepare the binder: Preheat the air fryer to 350°F (175°C) for 3 to 5 minutes if your appliance instructions call for it. Stir the panko and milk together in a large bowl and let stand briefly. Do not put loose parchment in the air fryer while it preheats.
- Mix gently: Add the egg, onion, Worcestershire sauce, garlic powder, salt, pepper, and beef to the soaked panko. Mix with clean hands or a fork just until combined; kneading or squeezing the mixture can make the loaf dense.
- Shape the loaf: Form one even, free-form loaf about 6 inches long, 3 inches wide, and 2 inches high. Adjust the shape to leave clearance on all sides of the basket without packing the meat tightly. Transfer it directly to the basket or onto an appliance-approved perforated parchment sling held down by the loaf.
- Cook before glazing: Air fry uncovered at 350°F for about 18 to 20 minutes. Do not flip or shake the loaf. Meanwhile, stir together the ketchup, brown sugar, glaze Worcestershire sauce, and optional vinegar.
- Glaze and finish: Spread the glaze over the top and sides. Start checking the center and the browning at about 25 minutes of total cooking time. Continue cooking until an instant-read thermometer inserted into the thickest part, without touching the basket, reads 160°F. Expect about 30 to 35 minutes total, though your air fryer and loaf shape may change the timing. The glaze should look glossy and set, with some browned spots. If it darkens too quickly, loosely shield the top with a small piece of foil, only if your appliance permits it and without blocking airflow.
- Rest and slice: Transfer the loaf to a parchment-lined wooden board and rest for 10 minutes. Cut crosswise into thick slices, then arrange them with a little overlap so the glazed tops and cut interiors show.
How to Fit the Loaf in the Basket
Leave space around the loaf so air can reach its sides. If your basket is too small for the full mixture, shape a smaller loaf and cook the remainder separately rather than crowding it. Keep any appliance-approved parchment secured beneath the food and clear of the airflow; serving parchment on the board does not need to go into the air fryer.
Using 90% lean beef limits excess drippings. If grease collects or smokes and your appliance permits foil, a low-sided foil boat can catch drippings without enclosing the loaf. Keep its sides low so air can still circulate.
Serving and Storage
Serve the thick slices with mashed potatoes and green beans or asparagus. For another beef dinner, try these Cheeseburger Sliders with Cheddar and Golden Onions.
Cool leftovers and refrigerate in an airtight container for 3 to 4 days. Reheat slices in the microwave or in the air fryer at 350°F until hot throughout. To make ahead, form the raw loaf, cover it, and refrigerate for up to 24 hours before cooking.
Cooked meatloaf can be wrapped tightly or stored in a freezer-safe container for up to 3 months. Thaw before reheating. A raw formed loaf can also be frozen; thaw it completely in the refrigerator before air frying.
