Birthday Ice Cream Cake
A thin vanilla cake base supports strawberry ice cream flecked with fresh berries, while upright ladyfingers form a golden border around the sides. Thick strawberry preserves make the darker swirls on top. Assemble the cake in a springform pan with prepared cake and store-bought ice cream, then freeze it until the center is firm. The key is to soften the ice cream just enough to spread it without letting it melt.
Ingredients for Birthday Ice Cream Cake

- 1 prepared 8-inch vanilla cake layer, about 1 inch thick (250g)
- 24–30 ladyfinger biscuits, or enough to line the pan (about 200g)
- 1 1/2 quarts strawberry ice cream (about 1,400g)
- 1 cup finely chopped fresh strawberries (150g)
- 1/3 cup thick strawberry preserves (110g)
Ladyfinger sizes vary, so use enough to form a close ring. A fully cooled homemade vanilla cake layer can replace the prepared one. For a separate baked-cake option, see this classic vanilla birthday cake.
How to Make Birthday Ice Cream Cake

- Prepare the base: Line the base of a 9-inch springform pan with parchment. Set the cooled cake layer inside. If needed, trim it so it lies flat with room around the edge for the ladyfingers. Chill the pan and cake briefly if the kitchen is warm.
- Stand up the ladyfingers: Place them upright around the inside edge of the pan, flat sides against the pan wall and bottoms on the parchment beside the cake. Fit them snugly against one another and the cake edge so they are less likely to tip. Trim uneven tops if needed.
- Prepare the ice cream: Let it soften just until a spatula can spread it. It should still be cold and hold its shape, not look melted. Fold in the chopped strawberries with a few gentle strokes.
- Fill the pan: Spoon in the ice cream, filling any gaps beside the ladyfingers without pushing them out of place. Smooth the top into an even layer. Work promptly; if the filling becomes runny, return the pan to the freezer until it firms up.
- Swirl the top: Dot the surface with cool, thick preserves. Draw a few shallow streaks through them with a skewer or knife tip, leaving distinct swirls rather than mixing them into the ice cream.
- Freeze: Set the pan level in a freezer at 0°F (-20°C) or colder. Freeze for at least 6 hours, preferably overnight. Start checking after 6 hours: the center should feel firm, and the top should not shift when the pan is moved gently. Once the surface is firm, cover the pan loosely without pressing on the swirl.
- Release and slice: Let the cake stand at room temperature for about 10–15 minutes, adjusting as needed so it is cuttable but still holds its shape. Release the springform ring carefully, using a thin knife along the inside edge if needed. Cut into 12–14 wedges with a knife warmed in hot water and wiped dry; wipe it between cuts.
Make-Ahead and Freezer Notes
Assemble the cake a day ahead if convenient, and keep it covered in the freezer until serving. Return leftover wedges to the freezer promptly and avoid repeated thawing and refreezing. Serve on chilled plates, with a few fresh berries alongside if desired.

Equipment
- 9-inch springform pan
- Parchment paper
- Spatula
- Skewer or knife
- Sharp knife
Ingredients
For the Cake
- 1 prepared 8-inch vanilla cake layer, about 1 inch thick (250 g)
- 24–30 ladyfinger biscuits, or enough to line the pan (about 200 g)
For the Filling and Topping
- 1 1/2 quarts strawberry ice cream (about 1,400 g)
- 1 cup finely chopped fresh strawberries (150 g)
- 1/3 cup thick strawberry preserves (110 g)
Instructions
- Line the base of a 9-inch springform pan with parchment and place the cooled cake layer inside. Trim it if needed so it lies flat with room around the edge.
- Stand the ladyfingers upright around the inside edge of the pan, with their flat sides against the pan wall and bottoms on the parchment. Fit them snugly against one another and the cake; trim uneven tops if needed.
- Soften the ice cream just until it can be spread with a spatula while still cold and holding its shape. Gently fold in the chopped strawberries.
- Spoon the ice cream into the pan, filling gaps beside the ladyfingers without pushing them out of place. Smooth the top.
- Dot the top with cool, thick preserves. Draw a few shallow streaks through them with a skewer or knife tip to create swirls.
- Set the pan level in a freezer at 0°F (-20°C) or colder. Freeze for at least 6 hours, preferably overnight, until the center is firm and the top does not shift when the pan is moved gently.
- Once the surface is firm, loosely cover the pan without pressing on the swirl.
- Let the cake stand at room temperature for about 10–15 minutes, adjusting as needed until it is cuttable but still holds its shape.
- Carefully release the springform ring, using a thin knife along the inside edge if needed.
- Cut into 12–14 wedges with a knife warmed in hot water and wiped dry. Wipe the knife between cuts.
Tips
- Use enough ladyfingers to form a close ring; sizes vary.
- If the kitchen is warm, briefly chill the pan and cake before assembling.
- Soften the ice cream only until spreadable; do not let it melt.
- Work promptly when filling the pan. If the ice cream becomes runny, return the pan to the freezer until it firms up.
- Use cool, thick preserves so the swirls stay distinct.
Variations
- Homemade Vanilla Cake Base: Replace the prepared cake layer with a fully cooled homemade vanilla cake layer.
