Easy Vegetable Ramen
This vegetable ramen has thin noodles in a generous ginger-miso broth, with sliced shiitake mushrooms, dark greens, scallions, and a jammy egg on each bowl. Prepared vegetable broth keeps the stovetop method manageable. Cook the noodles separately and add the broth just before serving so the strands stay tender and the toppings remain distinct.
Ingredients for Easy Vegetable Ramen

Makes 2 generous bowls. Allow about 10 minutes to prep and 15–20 minutes to cook, or 25–30 minutes total.
- 2 large eggs
- 6 ounces dried ramen noodles, without seasoning packets (170g)
- 1 tablespoon neutral cooking oil
- 6 ounces shiitake mushrooms, stems removed and caps sliced (170g)
- 1 tablespoon grated fresh ginger
- 2 garlic cloves, minced
- 4 cups low-sodium vegetable broth
- 1 tablespoon soy sauce, plus more to taste if needed
- 2 packed cups chopped kale, tough stems removed (about 65g)
- 2 tablespoons white miso paste
- 2 scallions, thinly sliced
- 1 teaspoon black sesame seeds
How to Make Vegetable Ramen

- Prepare the toppings: Slice the mushrooms and scallions, chop the kale, grate the ginger, and mince the garlic. Keep the mushroom slices large enough to remain recognizable in the bowls.
- Cook the eggs: Lower the eggs into gently boiling water and cook for 6½–7 minutes. Transfer them promptly to cold water so the yolks stay soft. Peel when cool enough to handle, and halve just before serving.
- Cook the mushrooms: Heat the oil in a medium saucepan or soup pot over medium heat. Add the mushrooms and cook uncovered, stirring occasionally, until softened and lightly browned at the edges, about 5–6 minutes. Add the ginger and garlic for the last 30–60 seconds, stirring until fragrant but not browned. Set aside some mushroom slices for topping.
- Simmer the broth: Add the vegetable broth and 1 tablespoon soy sauce. Bring to a gentle simmer, then add the kale. Cook uncovered for about 2 minutes, until the leaves are wilted but still dark green. Keep some greens available to arrange on top.
- Cook the noodles and add the miso: Boil the noodles in a separate pot of water, checking at the earliest time on the package. Drain when tender. Turn off the heat under the broth. Whisk the miso with a ladleful of hot broth in a small bowl until smooth, then stir it into the pot. Taste before adding more soy sauce; the miso also adds salt. If the broth is too salty, dilute it with a little hot water or unsalted broth.
- Assemble: Divide the noodles between two bowls and ladle the hot broth over them. Arrange the kale and mushroom slices in separate groups, add the scallions, and place one halved egg cut-side up in each bowl. Sprinkle black sesame seeds over the eggs. Serve immediately, with broth visible around the noodles and toppings.
Coordinating the Eggs, Broth, and Noodles
Start the eggs early so they have time to cool while the mushrooms and broth cook. Wilt the kale near the end, and wait until the broth is nearly ready before cooking the noodles. If burner space is limited, reuse the egg pot for the noodles; this may add a few minutes.
How to Keep the Noodles from Getting Mushy
Ramen brands have different cooking times, so follow the package rather than a fixed number of minutes. Boiling the noodles separately also keeps excess starch out of the broth. Drain them when tender and assemble the bowls right away: noodles left in hot soup continue to absorb liquid.
Vegetable Ramen Variations
Cremini mushrooms can replace shiitake, though the flavor and appearance will differ. Baby bok choy can replace kale; cook it briefly until bright green and tender.
For a vegan variation, replace the egg with tofu or omit it, and check the noodle, broth, and miso labels. The finished bowl will look different without the egg topping. Add chili oil to individual bowls if you want heat.
For a nonvegetarian option, try shrimp ramen noodle soup.
Storing and Reheating Vegetable Ramen
Refrigerate leftover broth and vegetables in airtight containers, separate from the cooked noodles. Keep any leftover eggs separate as well.
Reheat the broth and vegetables until hot, then combine with the noodles shortly before serving. Noodles stored submerged in broth will soften as they sit.
