Lemon Lush Dessert
Lemon lush has four layers: a lightly golden pecan crust, fluffy cream cheese filling, bright lemon pudding, and whipped topping. Only the crust goes in the oven; the assembled dessert sets in the refrigerator and is served in squares with fresh lemon zest and wedges.
For distinct layers, let the crust cool completely before adding the filling. Chill the cream cheese layer briefly, spread the pudding only after it thickens, and refrigerate the finished dessert for at least 4 hours before cutting.
Ingredients for Lemon Lush Dessert

- 1 cup all-purpose flour (125g)
- 1/2 cup (1 stick) unsalted butter, melted (115g)
- 1/2 cup finely chopped pecans (55g)
- 8 ounces cream cheese, softened (225g)
- 1 cup powdered sugar (120g)
- Two 8-ounce tubs frozen whipped topping, thawed and divided (450g total)
- Two 3.4-ounce packages instant lemon pudding mix (195g total)
- 3 cups cold whole milk
- 1 fresh lemon, finely zested and cut into thin, seeded wedges
How to Make Lemon Lush Dessert

Yield: 12 squares. Active prep: About 25 minutes. Crust bake: 20–25 minutes. Allow about 6–7 hours overall for cooling and chilling; an overnight chill is preferred.
- Bake the crust: Preheat the oven to 350°F (175°C). Mix the flour, melted butter, and pecans until the mixture holds together when pressed. Press evenly into the bottom of an ungreased 9-by-13-inch baking dish. Bake uncovered for 20–25 minutes, checking at 20 minutes, until the edges and scattered spots on top are lightly golden.
- Cool completely: Leave the crust in its dish for about 45–60 minutes, until both the crust and dish feel cool to the touch. A warm crust can soften the filling and blur the layers.
- Add the cream cheese layer: Beat the softened cream cheese and powdered sugar until smooth. Fold in one tub of whipped topping, then spread gently over the crust without pulling up crumbs. Refrigerate for 20–30 minutes.
- Add the lemon layer: Whisk both packages of instant lemon pudding mix with the 3 cups of cold milk until visibly thick and able to hold soft ridges from the whisk. Dollop over the chilled cream cheese layer and spread gently to the edges. Use the 3 cups of milk specified here rather than preparing each package separately according to its directions; this amount makes a firmer layer.
- Top and chill: Spread the second tub of whipped topping over the pudding. Cover without pressing the covering into the topping. Refrigerate for at least 4 hours, preferably overnight, until the layers hold their shape when a square is lifted.
- Cut and garnish: Cut into 12 squares with a sharp knife, wiping it clean between cuts. Lift out and serve chilled, with the four layers visible. Shortly before serving, finish the squares with fine lemon zest and thin, seeded lemon wedges.
How to Keep the Layers Distinct
The brief chill after adding the cream cheese helps keep the pudding from dragging through it. Dollop the thickened pudding across the surface instead of pouring it into one spot, then spread with a light touch. If a square slumps when lifted, give the dessert more time in the refrigerator; an overnight chill produces cleaner cuts.
Ingredient Notes
Use instant lemon pudding, not cook-and-serve pudding, which requires a different preparation and cooling process. Do not add lemon juice to the pudding; the fresh zest and wedges provide the lemon garnish. Finely chopped walnuts can replace the pecans in the crust.
Make-Ahead and Storage
Lemon lush can be assembled a day ahead and refrigerated overnight. Add the lemon wedges shortly before serving. Cover leftovers and refrigerate for up to 3 days for the best appearance and texture, returning the dessert to the refrigerator promptly between servings.
Refrigeration is preferable to freezing: the cream cheese layer may change texture after thawing.
