Mexican Street Corn Sweet Potato Bowl
Roasted sweet potato cubes and taco-seasoned ground beef form the warm base of these street-corn-inspired bowls. A mound of cool, creamy lime corn sits on top, with pickled red onions, cilantro, and a light hot-honey drizzle to finish.
Keep the layers separate for the best texture: give the potatoes room to brown, simmer the seasoning liquid until it coats the beef, and cool and dry the corn before adding its smooth cottage-cheese dressing.
Ingredients for 4 Bowls

- 1 1/2 lb sweet potatoes (680g), peeled or well scrubbed and cut into approximately 3/4-inch cubes
- 1 1/2 tablespoons olive oil
- 1/2 teaspoon kosher salt, plus more to taste
- 1/4 teaspoon black pepper
- 1 lb lean ground beef (450g)
- 2 tablespoons taco seasoning
- 1/3 cup water
- 2 cups cooked fire-roasted corn kernels (330g), cooled and well drained
- 3/4 cup full-fat cottage cheese (170g)
- 1 tablespoon mayonnaise
- 2 tablespoons lime juice, about 1 lime
- 1/4 cup crumbled Cotija cheese (30g)
- 1 small jalapeño, seeded and finely chopped
- 1/4 cup chopped fresh cilantro, divided
- 1/3 cup drained pickled red onions
- 1 tablespoon hot honey, for all four bowls
Optional: A light pinch of Tajín or other chile-lime seasoning per bowl, or 1 sliced avocado added at serving.
How to Make Mexican Street Corn Sweet Potato Bowls

- Prepare the potatoes: Preheat the oven to 425°F (220°C). Toss the sweet potato cubes with the olive oil, salt, and pepper, coating them lightly and evenly.
- Roast the potatoes: Spread the cubes in a single layer on a large rimmed baking sheet. Use two sheets if one would be crowded. Roast uncovered for about 25–30 minutes, turning once halfway through. Start checking at 25 minutes; the cubes should be fork-tender with browned edges and patches.
- Cook the beef: While the potatoes roast, heat a 10- to 12-inch skillet over medium-high heat. Add the beef and let it brown briefly against the pan before breaking it into crumbles. Cook until browned with no visible pink, draining excess fat if needed. Stir in the taco seasoning and water, reduce the heat to medium, and simmer uncovered until the liquid coats the beef without pooling. Allow about 8–10 minutes total cooking time; if using a food thermometer, ground beef should reach 160°F (70°C).
- Mix the corn topping: Blend the cottage cheese, mayonnaise, and lime juice until smooth, with no visible curds. Fold the dressing into the cool, well-drained corn with the Cotija, jalapeño, and about half the cilantro. Keep the kernels whole; the topping should be thick enough to hold a spoonable mound.
- Assemble: Divide the hot potatoes among four shallow bowls. Spoon the beef over them, leaving some potato cubes visible, then mound the cool corn in the center. Add the pickled onions and remaining cilantro. Drizzle lightly with hot honey, and add chile-lime seasoning or avocado if desired.
Getting Browned Sweet Potato Cubes
Cube size and pan space both affect roasting time. Approximately 3/4-inch cubes should become tender within the stated range, but crowded potatoes trap moisture and steam. Use a second sheet if needed, and judge doneness by tender centers and browned patches rather than the clock alone.
How to Keep the Corn Topping Thick
Cool the corn and pat off excess moisture before adding the dressing. If using frozen corn, cook it according to the package directions if needed, then cool and dry it. Drain canned corn thoroughly. Fire-roasted corn needs no additional charring step.
Blend the cottage cheese before folding it into the kernels, and add the topping only after the hot beef and potatoes are in the bowls. Feta can replace Cotija. Plain Greek yogurt can replace the blended cottage cheese for a tangier dressing, though its thickness will differ.
Air-Fryer Potato Option
For a smaller batch, air fry similarly sized potato cubes at 400°F (205°C) in uncrowded batches for roughly 12–16 minutes. Shake halfway through and check early for tender centers and browned edges; timing depends on the basket and load.
Meal Prep and Reheating
Refrigerate the cooked beef, potatoes, and creamy corn in separate airtight containers for up to 4 days. Keep the pickled onions separate or add them when serving.
Reheat only the beef and potatoes until heated through. A skillet with a splash of water works for the beef; for more browned potato edges, reheat the potatoes in a 400°F oven for about 8–10 minutes, checking as needed. Stir the cold corn topping and add it afterward. Add optional avocado fresh. Freezing the assembled bowls or creamy corn topping is not recommended.
