Sugar-Free Banana Pudding
These no-cook banana pudding parfaits have separate layers of soft-set pudding, whipped topping, banana slices, and vanilla wafers in clear glasses. Let the pudding thicken before layering so the white and pale-yellow bands stay distinct. A three-hour chill sets the cups and softens the wafers.
Allow about 20 minutes to prepare the parfaits, plus at least 3 hours to chill. The pudding mix, whipped topping, and wafers are products labeled sugar-free; the bananas and milk still contain naturally occurring sugars.
Ingredients for Sugar-Free Banana Pudding

- 1 package sugar-free instant banana pudding mix, about 1 ounce (28g), sized to make approximately 2 cups of pudding
- 2 cups cold milk (about 490g), or the amount specified on the pudding package
- 2 cups sugar-free whipped topping, thawed (about 300g)
- 2 medium ripe bananas (about 235g)
- About 24 sugar-free vanilla wafers (about 70g)
How to Make Sugar-Free Banana Pudding Parfaits

- Thicken the pudding: Whisk the pudding mix with the cold milk according to the package directions. If the package calls for a different amount of milk, use that amount. Let the pudding stand until smooth and thick enough to hold a soft mound on a spoon.
- Prepare the layers: Slice the bananas into thin rounds, reserving six slices for the tops. Set aside six whole wafers for garnish. Break most of the remaining wafers into pieces for layering and crush a few for crumbs. Reserve enough whipped topping to finish all six glasses.
- Fill the glasses: In six clear dessert glasses or tumblers, about 8 ounces each, alternate small spoonfuls of pudding and whipped topping with wafer pieces and banana slices. Repeat, dividing the ingredients evenly and leaving room for the garnish. Spread each layer gently with a small spoon; keep the pudding and whipped topping separate rather than stirring them together.
- Chill: Cover the glasses and refrigerate at 40°F (5°C) or below for at least 3 hours. The pudding should look set, with layers that hold their shape when a spoon enters a glass. The wafers will soften but remain visible.
- Finish and serve: Just before serving, add a whipped topping rosette to each glass using a spoon or piping bag. Scatter on wafer crumbs, stand a whole wafer in the topping, and add a reserved banana slice. Serve chilled.
Make-Ahead and Storage
Keep the covered parfaits refrigerated and serve within 2 to 3 days for the best appearance and texture. The bananas may darken, and the wafers will continue to soften. Add the top banana slices just before serving so they look fresh. Freezing is not recommended for these instant-pudding parfaits.
