Turtle Cookies
These turtle cookies have thick, pale vanilla shortbread-style bases instead of chocolate dough. A shallow well in each cookie holds caramel and a pecan half, while thin chocolate lines cross the top. The caramel, pecans, and chocolate give them their turtle-candy flavor.
The wells are pressed into the cookies immediately after baking, while they are still warm enough to shape. Let the cookies cool before filling them so the caramel stays inside the borders.
Ingredients for Turtle Cookies

- 1 cup (2 sticks) unsalted butter, softened (225g)
- 1/2 cup powdered sugar (60g)
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour, spooned and leveled (240g)
- 1/4 teaspoon fine salt
- About 5 ounces soft caramel candies, unwrapped (140g)
- 2 tablespoons heavy cream (30g)
- 18 pecan halves, plus a few spare
- 1/3 cup semisweet chocolate chips (55g)
Yield: About 18 cookies. Time: About 25 minutes active preparation, 30 minutes chilling, and 20–23 minutes baking per batch. Allow about 1 hour 45 minutes including cooling and setting, or longer if baking multiple batches.
How to Make Turtle Cookies

- Mix the dough: Beat the butter and powdered sugar until smooth. Mix in the vanilla. Add the flour and salt, mixing just until no dry flour remains and the dough holds together when pressed.
- Portion and chill: Scoop about 1 1/2 tablespoons of dough per cookie. Roll gently and flatten slightly into thick rounds. Place on a parchment-lined sheet and refrigerate for about 30 minutes, until firm but not frozen.
- Bake: Fully preheat the oven to 325°F (165°C). Arrange the chilled rounds about 2 inches apart on parchment-lined baking sheets. Bake uncovered, one sheet at a time, checking at 18 minutes and expecting about 20–23 minutes per batch. Rotate the sheet if your oven browns unevenly. The tops should look set and remain mostly pale, with edges and bottoms just beginning to turn light gold.
- Press the wells: Immediately after removing the cookies from the oven, gently press the rounded back of a teaspoon into each center. Make a shallow well with room for about 1–2 teaspoons of caramel, leaving a thick border and an intact bottom. Cool on the pan for 8–10 minutes, then transfer carefully to a rack and cool completely.
- Add caramel and pecans: Heat the caramels and cream in a microwave-safe bowl in brief intervals, stirring until smooth and spoonable. Add caramel gradually to each cooled well, stopping below the rim. Immediately seat one pecan half in each center.
- Drizzle: Microwave the chocolate chips in short intervals, stirring between each and letting residual heat finish melting them. Use a spoon or small piping bag to drizzle thin lines across the cookies, including the pecans and caramel. Let the toppings set before moving or stacking the cookies.
How to Shape the Caramel Wells
The lower-temperature bake keeps these shortbread-style cookies pale while their edges become lightly golden. Press the wells as soon as the cookies leave the oven; once they cool, they are more likely to crack. A lightly greased, rounded measuring-spoon back can help. Press straight down with gentle, even pressure, and ease up if a border begins to split.
Keeping the Caramel and Chocolate Neat
Leave a visible cookie border when filling each well so the caramel does not run over the sides and the pecan half stays prominent. If the caramel thickens while you work, warm it briefly and stir until spoonable again.
Melt the chocolate gently, stopping once stirring makes it smooth. Overheated chocolate can scorch or become difficult to drizzle. Let the finished cookies set fully so the chocolate lines do not smear when stacked.
Serving Turtle Cookies
Serve once the caramel and chocolate have set. For a pecan-forward cookie platter, add maple brown sugar cookies.
Storage and Make-Ahead Notes
Store fully set cookies in an airtight container in a cool room, with parchment between layers. For the neatest appearance, plan to serve them within about 3 days. The dough can be portioned and chilled ahead of baking.
Avoid reheating finished cookies if you want to preserve the caramel centers and chocolate lines. How these assembled cookies look after freezing and thawing is uncertain.
