Winter Cheese Board
This no-cook board keeps four cheeses in view: a whole Brie scored for serving, fanned slices of firm cheese, pieces of aged cheddar, and a blue-cheese wedge. Persimmon fans, two bowls of preserves, mixed crackers, nuts, and small clusters of cured meat fill the spaces around them.
Set down the cheeses and preserve bowls first, then work outward. That gives the board an abundant look without burying what guests need to reach. Allow about 25 minutes of active preparation and 35 to 45 minutes total, including time for the cheese to lose its refrigerator chill. Serves 6 to 8 as an appetizer.
Ingredients for a Winter Cheese Board

- 1 Brie wheel (8 oz; about 225g)
- 4 oz blue cheese wedge (about 115g)
- 6 oz sliceable firm cheese, such as Gruyère (about 170g)
- 6 oz aged white cheddar (about 170g)
- 2 medium ripe but firm Fuyu persimmons (about 250g)
- 1/3 cup fig jam (about 105g)
- 1/3 cup cranberry preserves or thick cranberry sauce (about 105g)
- 4 oz sliced salami (about 115g)
- 2 oz prosciutto (about 55g)
- About 6 oz assorted plain crackers and ready-to-serve toast (about 170g)
- About 3 oz dark seeded crisps (about 85g)
- 1/3 cup shelled pistachios (about 45g)
- 1/3 cup pecan halves (about 35g)
- 2 to 3 small fresh rosemary sprigs
Optional: 1/4 cup dried apricots to tuck into open spaces.

How to Assemble the Winter Cheese Board
- Prepare the components: Wash and thoroughly dry the persimmons. Spoon the fig jam and cranberry preserves into separate small bowls. Take the cheeses out of the refrigerator about 20 to 30 minutes before serving, letting them lose their chill while you assemble the board. Count this time toward the 2-hour room-temperature limit.
- Portion the cheeses: Cut shallow serving-wedge lines into the Brie without separating the wheel. Slice the firm cheese thinly enough to fan out, and cut or break the cheddar into bite-size pieces. Leave the blue cheese as a wedge.
- Anchor the board: Use a rectangular board about 18 by 12 inches or larger. Place the Brie near the upper center and set the two preserve bowls apart from each other. Arrange the remaining cheeses around them, fanning the firm-cheese slices. Keep each cheese visible and leave room for its knife.
- Add fruit, meat, and crackers: Slice the persimmons close to serving time and fan them in two or three spots. Add small stacks of salami and loose folds of prosciutto between the cheeses. Group the pale crackers and toast separately from the dark seeded crisps, away from preserves and cut fruit so they stay crisp.
- Fill the gaps and serve: Tuck pistachios, pecans, and, if using, dried apricots into open spaces. Add the rosemary, cheese knives, and a spoon for each preserve. The board should look full while the cheeses and bowls remain easy to reach. Serve any crackers that do not fit on a separate plate.
Choosing Cheeses and Portions
The Brie, blue cheese, sliced firm cheese, and aged cheddar give guests distinct textures without making cured meat the focus. The planned 24 oz of cheese serves 6 to 8 as part of an appetizer board with fruit, crackers, and modest amounts of salami and prosciutto. Another sliceable firm cheese can replace the Gruyère, and you can choose a blue cheese your guests enjoy.

Make-Ahead and Serving Safety
Portion the cheeses and fill the preserve bowls ahead, keeping perishable components refrigerated until assembly. Slice the persimmons and add the crackers near serving time. If persimmons are unavailable, thin apple or pear slices work, though the board will lose its orange accent; cut them close to serving to limit browning.
Keep the cheese and meat at room temperature for no more than 2 hours total, including cheese tempering and serving time. Refrigerate leftover cheeses and meats promptly, separately from the crackers and preserves.
For a meat-free board: Omit the salami and prosciutto and fill their spaces with more fruit, nuts, or crackers. For another seasonal arrangement, try the fall charcuterie board.
