Anti-Inflammatory Harvest Glow Bowl
Chewy black rice gives this warm harvest bowl a dark base for golden squash, green asparagus, browned mushrooms, and a savory smashed-chickpea crumble. Cool cucumber, tangy kimchi, and microgreens go on last, with a light drizzle of ginger vinaigrette.
Keep the ingredients in separate sections rather than tossing them together: the warm vegetables stay distinct, and the fresh toppings keep their crunch. “Anti-inflammatory” describes the ingredient style, not a medical benefit.
Ingredients for 4 Bowls

- 1 cup black rice, rinsed (185g)
- 2 cups water, or the amount directed on the rice package
- 1/2 teaspoon kosher salt for the rice, plus more to taste
- 1 small delicata squash, seeded, or 3 cups peeled butternut squash, cut into 3/4-inch pieces (about 425g)
- 1 bunch asparagus, trimmed and cut into 2-inch pieces (about 340g)
- 5 tablespoons extra-virgin olive oil, divided
- 1/2 teaspoon ground turmeric, divided
- 8 ounces shiitake or cremini mushrooms, sliced (225g)
- 1 (15-ounce) can chickpeas, rinsed, drained, and dried thoroughly (about 240g drained)
- 1 teaspoon smoked paprika
- 1 tablespoon finely grated fresh ginger
- 2 tablespoons apple cider vinegar
- 1 teaspoon Dijon mustard
- 2 teaspoons maple syrup
- 1 cup diced English cucumber (150g)
- 1 cup kimchi, chopped if needed (150g)
- 1 loosely packed cup microgreens (about 25g)
- Black pepper, to taste
Optional toppings: 1/4 cup toasted pumpkin seeds, 2 tablespoons chopped parsley or cilantro, sliced avocado, or a few edible flowers.
How to Make the Harvest Glow Bowls

- Start the rice and oven: Preheat the oven to 425°F (220°C). Put the rice, water, and 1/2 teaspoon salt in a medium saucepan. Bring to a boil, cover, and reduce to a gentle low simmer. Cook according to the package directions, about 30 to 35 minutes, until tender and pleasantly chewy with the liquid absorbed. Start checking at the earliest package time. Rest covered for 5 to 10 minutes, then fluff.
- Roast the vegetables: Spread the squash on a large rimmed sheet pan and toss with 1 tablespoon olive oil, 1/4 teaspoon turmeric, salt, and pepper. Roast uncovered, turning once about halfway through. After about 15 minutes, add the asparagus to a separate side of the pan with 1 teaspoon olive oil, salt, and pepper. Leave space around both vegetables so they brown rather than steam; use a second pan if needed. Start checking the asparagus after 8 minutes and remove it when bright green and tender-crisp, about 10 to 14 minutes after adding it. Start checking the squash at 22 minutes; it should be fork-tender with browned edges after about 25 to 30 minutes total.
- Brown the mushrooms: Heat 1 teaspoon olive oil in a 12-inch skillet over medium heat. Add the mushrooms, season lightly with salt and pepper, and cook uncovered for 6 to 8 minutes, until browned and their released moisture has evaporated. Transfer to a plate.
- Make the chickpea crumble: In the same skillet, heat 1 tablespoon olive oil over medium-high heat. Add the dried chickpeas and lightly smash about two-thirds of them with a spatula. Season with the smoked paprika, remaining 1/4 teaspoon turmeric, salt, and pepper. Cook uncovered for 8 to 10 minutes, leaving them undisturbed for 2 to 3 minutes between stirs, until craggy and browned in spots.
- Whisk the dressing: Whisk the remaining 2 tablespoons plus 1 teaspoon olive oil with the ginger, vinegar, Dijon, maple syrup, and a little salt and pepper. Taste and adjust the seasoning. Drain the kimchi briefly if it has enough liquid to pool in the bowls.
- Compose the bowls: Let the hot vegetables stand for 3 to 5 minutes. Divide the black rice among four wide, shallow bowls. Arrange the chickpeas, squash, asparagus, mushrooms, cucumber, and kimchi in distinct sections over the rice. Drizzle lightly with dressing, then add the microgreens at the center. Add any optional toppings just before serving.
How to Get Browned, Craggy Chickpeas
Dry the rinsed chickpeas thoroughly before they reach the skillet. A wide pan lets moisture evaporate, while leaving the smashed pieces undisturbed between stirs gives their uneven edges time to brown. Keep some chickpeas whole for a mix of textures.
Grain Swaps and Dietary Notes
Black rice gives the main bowl its dark, chewy base. For a lighter-looking bowl, use 2 1/2 to 3 cups cooked farro instead; farro contains gluten. Cooked brown rice or quinoa are other grain options. Check kimchi and condiment labels if you need the finished bowl to be vegan or gluten-free, since ingredients vary.
For a cold version, cool the cooked grain and roasted vegetables before assembling. Cooked, cooled farro works particularly well here; toss it lightly with the ginger vinaigrette, then add the crisp toppings near serving. If kimchi is unavailable, quick-pickled cabbage or sauerkraut can provide tang, though the flavor will differ.
Meal Prep and Storage
Cook the rice, roast the vegetables, brown the mushrooms and chickpeas, and whisk the dressing ahead. Cool the cooked components before refrigerating them in covered containers. Keep the dressing, cucumber, kimchi, microgreens, and crunchy toppings separate so the rice stays dry and the greens stay fresh.
For a warm bowl, gently rewarm the rice, roasted vegetables, mushrooms, and chickpeas before adding the cool ingredients and dressing. Do not reheat the cucumber or microgreens. Freezing assembled bowls is not recommended because the fresh ingredients lose their texture; plain cooked rice can be frozen separately.
Nutrition
